Christine Hamilton's Split Pea Soup

Hi Brad - as promised. This is a nice creamy pea soup recipe - good way to use up leftover ham...Chris
- 1.5 cups dry yellow or green split peas
- 2.5 cups water
- 2 (10 oz) cans condensed chicken broth, undiluted
- 2 cups coarsely chopped cooked ham, divided
- 1 cup shredded carrot
- 1 cup chopped onion
- 1 cup chopped celery
- 2 Tbsp butter
- 3 cups milk
- Salt and Pepper to taste
- Croutons
Wash peas and place in large saucepan
Add water, chicken broth, 1 cup ham, carrots, onion, celery and butter and bring
to a boil;
Reduce heat, cover and simmer for 2.5 - 3 hours, or until peas are tender;
Stir in milk and remaining cup of ham
Add salt and pepper
Reheat to serving temperature and Garnish with croutons.
