Christine Hamilton's Morning Glory Muffins

"I just put a batch of these in the oven - the kids love them!" - Christine Hamilton
- 2 cups all purpose flour (or 1 cup all purpose, 1 cup whole wheat)
- 1.25 cups sugar (I do half and half brown and white)
- 2 tsp baking soda
- 2 tsp cinnamon
- 0.5 tsp salt
- 2 cups grated carrot
- 0.5 cups nuts (optional)
- 0.5 cup coconut
- 0.5 cup chocolate chips
- 1 apple, peeled, cored and grated
- 3 eggs
- 1 cup salad oil
- 2 tsp margarine
In large bowl, mix flour, sugar, baking soda, cinnamon and salt
Stir in carrot, raisings, nuts, coconut, chocolate chips and apple
In a separate bowl, beat eggs, oil and vanilla
Stir into flour mixture just until batter is combined
Spoon into muffin cups, filling each to the top.
Bake at 350F for 20 minutes - makes about 14 muffins
