1 (8 oz/250 g) round Brie cheese (best buy is at Costco)
1 cup of cranberries (fresh or frozen)
2/3 cup of sugar
1/3 cup of cider vinegar
2 tbsp water
1 tsp ginger root (I used sliced/pickled ginger)
1/4 tsp cinnamon
1/8 tsp ground cloves


Brie:
Place Brie in freezer for 30 min to make trimming easier. Remove and trim off top rind and
place in an ovenproof dish that fits the cheese closely (butter the dish first) Oh yeah - this
is NOT a low-fat recipe!!



Chutney:
In saucepan over med-high bring to a boil the cranberries and remaining ingredients until berries
begin to POP, reduce heat and simmer for about 20 min, or until thick.  (This can be made ahead
and stored in the fridge for up to a week or frozen for a month)


Cooking Instructions:
Pre-heat over to 350/180 and bake cheese for 15-20 min until it has softened and just started to
melt. Do not over bake. Remove and spoon chutney on top of cheese. Serve with crackers.


Best served on a cold winters eve outside by the fire/chiminea.
